THE AVAILABILITY OF THE CHEESE

Industrial Camembert is manufactured by cheesemakers in the Pays d'Auge, the region of Normandy, and many countries the world over. Since 1983, the ingredients and method of manufacture have been strictly controlled by French government decree: it is now an agricultural product which benefits from an "Appellation d'Origine Controlée (A.O.C., site in French)", as do many of the great vintage wines of France. In the village of Camembert, one local farmer continus the tradition of making Camembert in the ancient manner.
